Roosters will be open to the public for dining on the 3rd Thursday of each month from May to September. Hours will be 5pm to 9pm, with dinner served from 5:30 to 7:00pm- must RSVP for dinner. I’d wanted to visit Pheasant Bonanza since hunting with one of their dogs at another lodge. I was impressed then, and more so when we made some episodes of Wingshooting USA there recently. The grounds are varied and managed carefully for birds and good dog work. The setting is beautiful, staff accommodating and fun to be with. The dogs,....were stellar!
Roosters is a 1950’s hunting style bar and restaurant for members, guests, and friends of Pheasant Bonanza. Overlooking the rolling hills of our hunting fields, we offer an artisan vintage drink menu as well as the working man’s beer and whiskey.
Pheasant Bonanza is fortunate to have two chefs, a husband and wife team, on staff- Chef April oversees our dining and beverage program, and Chef Aaron continues to prepare dinners for clients on occasion, both on-site and on remote hunts, while primarily training client dogs and guiding. Both prepare specialty items from Gingerbread pancakes for breakfast to a custom smoked pheasant charcuterie appetizer, Jack Daniels 20 hour roast beef and more. Each evening meal offers one of their select dinner menus, as well as homemade desserts such as Salted Caramel Apple Pie or Maple Bourbon Chocolate Mousse. Groups and private parties can choose from the Chef’s repertoire for a custom meal.
Step up to the bar for a specialty drink, beer or wine. Enjoy the rustic barn wood while you visit with friends or watch your favorite sports team on TV. We want you to sit back, relax and let us to do the work.
Roosters can accommodate around 100 people for parties and rental.

Chef Aaron, born and raised in Nebraska, started his culinary career cooking in his mother’s Italian restaurant Vito’s in Seattle, then went on to work as a saucier at the Hunt Club in the Sorrento Hotel. He then moved with April to New York and worked first at Lupa, an Iron Chef Mario Batali restaurant in Soho, then at Brooklyn Label, a neighborhood café specializing in comfort food and insanely busy brunches.
“As a bird hunter myself I know what it’s like to hunt all day and come back and want to eat some really good food and relax.” Aaron brings that knowledge to everything he does at Pheasant Bonanza, making every meal a four star experience. Our customers have never been happier.
April Goettle, wife of Chef Aaron Schroder, has a 20 year career as a craft bartender and general manager, working for such restaurants as The Breslin in New York City, run by British chef April Bloomfield. She also worked at the craft beer bar Spuyten Duyvil in Brooklyn (a top ten ranked bar by Beer Advocate.) Born and raised in Montana, April is an avid horsewoman and rides with the North Hills Hunt, a traditional foxhunting club located out of Omaha. She maintains several organic gardens on their farm, minutes away from Pheasant Bonanza, which allows the restaurant to offer fresh organic produce, greens, herbs, and apples during the growing season.
